First release bottle - bought online from Absinthes.com I believe.
Reviewed 1-10-2023
Appearance - Olive Oil and straw. No visible sediment.
Louche - Starts slowly with nice layering. Quite thick and still a nice green color at 3:1 and 4:1.
Aroma - pretty intense and punchy. Lots of anise, wormwood, citrussy hyssop. Slight mustiness reminiscent of old books.
Flavor - Still hot, even at 4:1. Slight sweetness and creamy.
Finish - honey sweetness with just a bit of the wine base. It's light and enjoyable.
Overall - I don't know if they're still be producing this absinthe, but the years of aging have made this quite enjoyable.

Leans more towards a pale olive-yellowish-brown kind of color rather than a deep green of any kind. Reminds me of a bottle of Meadow of Love I had for over a year that turned yellowish. Still attractive. The louche isn't bad but isn't anything to write home about.

I love the aroma! The anise is there but there's also a fruity sweetness, almost like fruit punch. The flavor however, is much more subdued. I feel like subdued is the main word that describes it actually. Maybe I should remember to try less water next time but I think the flavors just aren't very bold here. Anise, a murky sweetness, but probably bitterness dominates the profile for me. Still not bitter enough for me to want sugar. Mouthfeel maybe a *little* on the oily side but ok. The finish gets a little better with the fruityness coming forward just a bit.

I want to point out that with the price factored in, this is a pretty solid drink! I probably won't get it again because I'm into exploring when it comes to mid-range absinthes, rather than getting the same ones over and over (I do that with the better stuff), but if my local booze store had this in stock I probably would get it occasionally, out of convenience. It makes a little less sense for me to stick with it though since I have to import, so why not try something else next time? Ultimately though, this is very good for the price.

Appearance: a medium peridot green, with no sediment. Quite similar to that of Centenaire. The color is in no way as dark as it appears in the picture here.

Louche:very thick oily trails form the very beginning, the louche starts slowly, preceded by a lot of orange at the bottom of the glass, with a clearly distinct top layer. It develops into a very thick, green louche that stays thick even at 1:5.

Aroma: Before adding water an intense aroma of anise, wormwood, liquorice, hyssop. The Devoille wine alcohol is less intense than expected. With water the aroma intensify somehow, but does not become complex.

Taste: The typical Devoille taste, with wine alcohol less present than usual. A balanced holy trinity, with a good presence of hyssop and angelica. Well round and creamy, sweet, but not overly complex. Somehow spicy, with hints of cinnamon.

Finish: a long persistence of the holy trinity.

Overall: This absinthe does not have a strong Devoille personality as the Libertine ones or the Centenaire. I am very fond of Devoille’s products, but I fail to find here anything intriguing. It is a very good product for its price, without the harsh notes of Libertines that are usually love or hate. Well balanced, well mannered, but not as intense in aroma and taste as the Centenaire.

I enjoy the absinthes offered by the Devoille distillery but they are unique tastewise in comparison to other distillers. I know of no other brand with a similar taste profile but one thing is certain they do offer a decent absinthe experience at a reasonable price often lower than most other brands.

Absinthe Soixante Cinq is no exception. For a modest 55$ US you get an interesting absinthe experience with artisan expertise .

The Tasting : 4:1 dilution with one sugar cube

Appearance: Organic and attractive but almost cognac-like in its coloration. Still green but appraoaching brown

Louche: brown-green roiling tendrils extend from the top as the louche works its way from the bottom of the glass end coloration not as attractive as it could be due to its original dark hues.

Aroma: Nice honeyed vanilla notes that become more pronounced with the addition of water. A tinge of mint with stronger notes of fennel and anise.

Flavor/Mouthfeel: At 4:1 there was a bit of alcohol sting at first but later subsided. The vanilla-honeyed tones really are quite nice and are reminicent of Defougerolle Verte though not as strong. Enjoyable overall and expect to like it more over time.

Finish: Lingers well and the honey vanilla overtones really invite a second glass. I would like to taste more wormwood coming through in the profile but Soixante Cinq's herbal sweetness is quite pronounced.

Overall: Enjoyable and as mentioned before the taste is unique to Devoille absinthe offerings. I would still prefer the complexity of the Defougerolle Blanche though the 65% ABV provides a milder aternative.

A quality absinthe at a good price. It may not be the most memorable of the absinthes i've tasted but is enjoyable nonetheless. Considering the price to quality ratio. I'd recommend it.
