Made in the traditional French Pontarlier style, this absinthe uses Grand Wormwood, Hyssop, and Lemon Balm from Virginia, Aniseed from Andalusia, Spain, and Fennel Doux from Provence, France.

This review is for batch 12, distilled in November of 2015.

Appearance: pre-louche, this absinthe exhibits a vibrant peridot green. No sediment.

Louche: lovely wisps of oil trails when using a fountain. Fully louched by 2.5:1. Prepared to a final ratio of 3:1. Opalescent and attractive. Luscious yellows, greens and whites. Very inviting.

Aroma: Gorgeous. Room filling. Lots of minty wormwood complimented by citrus rind, sweet anise, and fennel.

Flavor: wonderful balance of sweetness from the anise and fennel and slight drying bitterness from the wormwood. The quality of herbs is undeniable. Pleasant slight numbing from the anise. This is tasty juice.

Finish: very enjoyable. Full mouthfeel with a lingering flavor that invites you to have another sip.

Overall: a fantastic representation of a traditional absinthe crafted by someone who knows his stuff, uses proper equipment, and cares about obtaining the highest quality ingredients. Highly recommended for the absinthe newcomer and connoisseur alike.
