Appearance: light golden brown. Inviting. No visible sediment.
Louche: Very nice louche. The barrel aging lends a peachy hue to the fully louched glass.
Aroma: Nice anise aroma balanced out with the mintiness of wormwood. Hints of caramel and vanilla from the barrel. Quite intriguing.
Flavor: Slight bitterness from the wormwood, and nice undertones from the anise. Hints of barrel tannins and caramel. Enjoyable, but very light flavors. Could use a bit more 'punch'.
Finish: A bit thin and insipid at 3:1. Thicker but a bit hot at 2.5:1. Good flavor, but it recedes quickly.
Overall: a solid effort. You can tell they care about their products. It's an enjoyable tipple, but every time I took a sip, it left me wanting to add more absinthe back into the glass to strengthen the flavor. It just seems a tad bit watered down. But overall, there is nothing that is off-putting or offensive. I'd just like a fuller flavor and creamier mouthfeel.
