From the distiller: Inspired by a 19th Century recipe, this absinthe is distilled the traditional way. Joual Vert combines authenticity and Quebec’s terroir by using Wormwood grown in the Eastern Townships. Made from another 12 botanicals, among them fennel and green anise, it has a perfect balance between mellowness and bitterness.

Appearance - Straw with hints of green; no sediment
Louche - Nice green louche. Hints of white and yellow. Nice thickness, but not really opalescent.
Aroma - wonderful. Sweet and minty with nice wormwood, fennel, and sweet anise. Deep and inviting.
Flavor - tons if it. Very complex. Anise is moderated by the mintiness of the wormwood and a hint of citrus. Slightly astringent.
Finish - nice finish with slight bitterness that builds the more you drink, but not in an unpleasant way. Might be subdued with some sugar.
Overall - very enjoyable, easy drinker. A great representation of an authentic absinthe.
