Edward III New York Absinthe
Traditional Absinthe
The absinthe is perfectly clear, with no colour, haze or debris. The aroma is floral wormwood and anise. La bleue-like. A tad minty.

Quick louche, but oddly ends up thin. gains a hint of yellow. With water the aroma is a little weak, mostly anise. Earthy and simple.

The flavour is a pleasant juxtaposition of earthy, minty, and floral. Light with balanced wormwood and anise. Sweet and no bitterness.

The finish is very light and brief, mostly anise.

This is a pleasant, refreshing, simple absinthe, but nothing about it stands out.
