Review of batch 3

Appearance: light green with no visible sediment (batch two was darker, similar to olive oil)

Louche: louched up nicely, but slightly too thin

Aroma: sweet and enticing with a nice brandy base. Hyssop and wormwood on the nose after louching. I’d like more aromatic anise and wormwood, but still nice.

Flavor: light and refreshing. Enjoyable flavor from the herb bill and the brandy base is present without being overpowering.

Finish: slight astringency from the Wormwood, and slight numbing effect. Lingers for only a little while, but enjoyable while it does. Sugar enhances the mouthfeel a bit and prolong ]s the finish slightly.

Overall, a decent start. Obviously a traditional method and recipe, but as with many new brand that take their craft seriously, it seems hesitant to push the envelope on bringing out a lot of flavor. More green anise and tails recycling should help future batches become even more enjoyable.
