Brut

2 dashes orange bitters
1/2 jigger of French vermouth
1/2 jigger of Calisaya
1 dash absinthe

Stir in iced mixing glass and strain into chilled cocktail glass.

"An extremely 'dry' cocktail. 'Brut' (French) means 'raw.'  Many customers pronounced it 'Brute,' and so thought it."

The Astor Hotel Special

1 1/2 oz cognac
2 bar spoons maraschino liqueur
1/3 oz egg whites
3/4 oz absinthe
1 bar spoons lemon juice

Shake with lumps of cracked ice. Strain into a goblet. Top with chilled soda water.
